Ingredients
- 4 salmon fillets (about 6 ounces each)
- 3 cloves garlic
- Sea salt and black pepper, to taste
- 2 teaspoons thyme
- 4 tablespoons olive oil
- 1 pound spelt pasta
- 1 zucchini
- 8 cherry tomatoes
- 2 small red onions
- 3 tablespoons goat's milk cream cheese
Directions
- Rinse the salmon and pat dry. Combine 2 cloves of the pressed garlic, sea salt and pepper, thyme and 1 tablespoon of the olive oil in a baking dish. Add the salmon and turn to coat in the marinade.
- Cook the spelt pasta according to the package instructions, and chop all the vegetables in the meantime. Add the remaining 3 tablespoons olive oil to a pan and sauté the vegetables for 5 minutes over high heat.
- Drain the pasta and return it to the same pot, adding the goat cream cheese and the remaining 1 pressed clove of garlic. Stir well and add the sautéed vegetables.
- Fry the salmon in the vegetable pan over low heat until pink. Slice the cooked salmon into large pieces and add to the pasta and vegetables. Serve in nice bowls. Enjoy!
