Mexican Food Detour: Try This Lamb Fajitas Recipe

Ingredients
  • 1 1/4 pounds lamb strips
  • 3 cloves garlic
  • 1/4 cup lemon juice
  • 2 teaspoons ground cumin
  • 1 tablespoon olive oil
  • 1 large red bell pepper
  • 1 large green bell pepper
  • 1 medium yellow bell pepper
  • 1 large red onion
  • 8 (8-inch) flour tortillas
  • 1 large avocado
  • 1/4 cup finely chopped fresh cilantro
  • 1 tablespoon lime juice
  • 1 small white onion
  • 2 medium tomatoes
  • 1 fresh long green chili
  • 1/2 cup coarsely chopped fresh cilantro
  • 1 clove garlic
  • 1 small white onion
  • 2 tablespoons lime juice
Directions
  1. Combine lamb, garlic, juice, cumin and oil in large bowl. Cover; refrigerate.
  2. Cook lamb, in batches, in heated oiled frying pan, stirring, until browned all over and cooked as desired. Remove from pan. Cover to keep warm.
  3. Cook bell peppers and onion, in batches, in same pan, stirring, until just softened. Remove from pan.
  4. Meanwhile, heat tortillas according to instructions on packet.
  5. Return lamb and bell peppers mixture to pan; stir gently over medium heat until hot.
  6. Divide lamb mixture between serving plates; serve with tortillas, guacamole and salsa cruda.
  7. Gently combine ingredients in small bowl; season to taste.
