Vegan Cooking, Wine, International Foods
- Clare is obsessed with foraging Ireland's wild plants. She knows where to find the elusive 'pepper dulse' — a seaweed prized for its truffle-like flavor — and has mastered the art of elderflower champagne.
- She has a passion for gardening and loves to experiment with growing unusual edible plants for the Irish climate, such as quinoa, amaranth, oca, and Jerusalem artichokes.
- While living in Hanoi for two years, she visited every vegan restaurant in the city and loves recreating the Vietnamese dishes she tried there.
Experience
Clare grew up on her family's winery in Ireland where they made artisanal wines from local ingredients like elderberries and strawberries. She later merged food with social care, teaching cooking and gardening skills to people with intellectual disabilities. She now travels the world exploring global food traditions, along the way, she's documented Georgia's ancient wine practices, Vietnam's plant-based cuisine, and Argentina's gaucho cooking culture.
Education
Clare holds a bachelor's in social sciences from Waterford Institute of Technology and a certificate in horticulture.
