"The rule was, you couldn't burn the house down," half-jokes Austin restaurateur Jack Gilmore in our interview with him and his son, Bryce, at April's Austin Food & Wine Festival. Bryce is the owner of the acclaimed wood-fire restaurant Barley Swine and was named a Food & Wine Best New Chef in 2011 — as well as a James Beard Award semi-finalist.
