Video: How Mario Batali Was Raised On Odd Cuts Of Meat, Before They Were Trendy
In this latest video from Nowness, titled Mario's Meats, Mario Batali tells the story behind Chi Spacca, his February opening in Los Angeles (Italian translation: "cleaver"). Crucial Batali lines: 1. "My favorite thing to eat is what somebody else has made." 2. "You can teach somebody to cook a steak in a hour, but to teach somebody to cure their own meats, you really have to try it for awhile — and then wait 300 days to see if you messed up." Chi Spacca is a project with longtime partners Nancy Silverton and Joe Bastianich. It celebrates the odd cuts of meat that Batali was raised on as a child.
