How To Make A Compound Butter
Compound butter is so easy to make you should have at least three varieties in your freezer at all times. Use any logical blend of fruit, vegetables, nuts, herbs and spices. Fresh herb butter works great as a finishing element for the perfect grilled steak, in a baked potato or for thickening a pan sauce. Spice-spiked butter is perfect for cooking into rice or smearing on naan and as for the incredibly versatile sweet-fruity-salty orange-honey butter...well, here are some ideas:
- Buckwheat Pancakes with Orange Honey
- Ginger and Poblano Cornbread
- Steel-Cut Oats
- Poached Duck Breast
- Brussels Sprouts with Fried Chicken Liver (just trust me)
Here's what you'll need:
- A stand mixer
- 2 sticks of unsalted butter, cubed
- 1 navel orange, zested and then supremed
- 1 tablespoon honey
- 1 large pinch kosher salt
- plastic wrap
