Word Of The Day: Civet
If you've got game (and we know you do), then you can make civet. And by game, we mean the small, furry kind. You know, like rabbits. What, you don't hunt rabbits? How about hare? Duck? Well then how are you supposed to make this cute, fuzzy stew?
In culinary terms, civet is a French dish made of these small furry and feathery critters, seasoned to perfection with bacon and wine like only the French can. Oh, and you'll also want to hunt some mirepoix to cook it with.
