This NYC Rooftop Bar Crafts Cocktails Based On Your Personality

Bars without cocktail menus – where every drink is made to order — have carved out a recognizable niche in the cocktail world. Examples include Civil Liberties in Toronto, Attaboy in New York City, and Bisou. in Paris. Maybe soon one will be listed on the 50 Best Bar List, which was acquired by the 50 Best Restaurant List.

One of the original bespoke cocktail joints, the NYC-based Mulberry Project, brought this concept to cities as far-flung as Tulum and Tel Aviv in the early 2000s with its popular pop-up bars around the world. Now, a Mulberry Project alum, Jeremy Strawn, is back behind the bar at an inventive new bespoke cocktail service at the RT60 rooftop bar in New York City. Located on top of the Hard Rock Hotel in Midtown, this sleek terrace bar with spectacular city views (and an elevator that will make your ears pop) serves up cocktails tailor-made to each guest's preferences. But it doesn't just take into consideration your favorite spirits or go-to drinks — it takes your personality into account as well.

RT60 bespoke cocktails

RT60's bespoke cocktail service allows its talented bartenders to do what they do best: engage with guests on a personal level while testing their mixology expertise to its full extent. From Tuesday through Friday during the summer, thirsty guests can enjoy a cocktail crafted just for them.

The team will ask you questions, like: What's your favorite band? Do you have a secret talent? What's your favorite movie quote? The bartenders will then interpret your answers into drink format.

Their base spirits include Ketel One, Don Julio Blanco, Don Julio Reposado, Tanqueray 10, Captain Morgan White, Ron Zacapa 23yr Bulleit Bourbon, Pierde Almas Mezcal, and Johnny Walker Black, and fresh cocktail ingredients are seasonally and locally sourced each day. There's always a colorful variety, with ingredients ranging from yuzu to celery.

At $25 per drink, you're definitely paying for the experience, but the views, plush sofas, and attention to detail will definitely soften the blow to your wallet.

How it works

RT60 came up with a sample bespoke cocktail to show Food Republic how the process works. In a nutshell, they supply the questions, and the customer gives their answers. In this example, the customer was asked about their secret talent, favorite band, go-to guilty pleasure song, and favorite line from a movie. The fictitious customer answered that they could lick their elbow, their favorite band is Blink 182, and that their go-guilty pleasure song is Miley Cyrus' "Party in the USA." Their favorite movie quote is, "I know you can be underwhelmed and you can be overwhelmed, but can you ever just be whelmed?" from "10 Things I Hate About You."

The resulting cocktail? The appropriately named "All the Small Things" — made with Don Julio Blanco tequila, mango, kalamansi, ginger, and garnished with an edible orchid.

The explanation is everything one could hope for: Named for the 1999 Blink 182 hit song, this drink uses tequila to capture the customer's "youthful spirit," ginger for their spicy and playful secret talent, and mango and kalamansi to reflect tastes that are "mainstream with a bit of an edge."
