How You Mix A Classic Old Fashioned

"The Old Fashioned is one of the most argued-over cocktails," says John Bush, co-owner of Talde, Pork Slope and Thistle Hill Tavern (and one of the Three Kings Of Brooklyn). "I've had it made 20 different ways. I've argued with people. It makes me crazy." A longtime bartender who oversees the bar program at his three Brooklyn restaurants, Bush developed his Old Fashioned recipe from an old fashioned source, a cocktail book from the early 20th Century. Hence, the muddled orange and cherries, which he says makes the drink like a "frothy fruit punch." And a refreshing one at that. And note, as with all Old Fashioned recipes, there is debate whether to stir or shake. We're pro-shake.
