Ingredients
- butter for the pan
- flour for the pan
- 1 1/4 sticks butter
- 1 tablespoon vanilla sugar
- 3/4 cup granulated sugar
- 6 ounces dark chocolate (70%)
- 3 large eggs
- 2/3 cup all purpose flour
- 2 pinches salt
- 1 tablespoon green tea powder (matcha powder)
Directions
- Preheat the oven to 350°F.
- Butter a 9-inch square pan, preferably with a removable bottom, and dust it lightly with flour. You can also line it with parchment paper.
- In a standing mixer, whip the butter, vanilla sugar and sugar together until lightened and fluffy.
- Chop the chocolate and melt in the microwave.
- Beat the egg whites in a separate bowl.
- Stir the egg yolks into the butter mixture and then whisk in the chocolate.
- Fold in the flour, salt and egg whites.
- Pour the batter into the pan and bake on the lowest rack for about 25 minutes.
- Remove and let cool.
- When the cake is completely cool and firm, dust it with matcha powder and cut into pieces.
